Ingredients
  

For the Cinnamon Banana Bread:

  • Ripe bananas: 3 medium mashed
  • Granulated sugar: ½ cup
  • All-purpose flour: 1 ¾ cups
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Salt: ½ teaspoon
  • Ground cinnamon: 1 ½ teaspoons
  • Brown sugar: ¼ cup
  • Eggs: 2 large
  • Greek yogurt: ½ cup
  • Butter melted: ½ cup
  • Vanilla extract: 1 teaspoon

  • Brewed coffee: ½ cup
  • Granulated sugar: ¼ cup
  • Butter: 1 tablespoon

Instructions
 

  • Step 1: Preheat and Prep
  • Preheat the oven to 350°F (175°C). Grease a 9x5 loaf pan and line it with parchment paper.
  • Step 2: Mix Dry Ingredients
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Step 3: Combine Wet Ingredients
  • In another bowl, beat granulated sugar, brown sugar, eggs, Greek yogurt, melted butter, and vanilla until smooth.
  • Step 4: Blend Wet and Dry Mixtures
  • Gradually add the dry mixture to the wet mixture. Stir until just combined.
  • Step 5: Add Bananas
  • Gently fold in the mashed bananas until evenly distributed. Do not overmix.
  • Step 6: Bake
  • Pour the batter into the prepared loaf pan. Bake for 50 minutes or until a toothpick inserted comes out clean.
  • Step 7: Prepare Coffee Syrup
  • In a small saucepan, combine brewed coffee, sugar, and butter. Add a cinnamon stick for extra spice if desired.
  • Heat over medium until sugar dissolves and syrup thickens slightly.
  • Step 8: Drizzle and Serve
  • Once the bread has cooled, pour the coffee syrup over the top. Let it set before slicing.
