Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup chocolate protein powder
  • 1/4 cup cocoa powder
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond butter
  • 1/4 cup brewed coffee cooled
  • 1 teaspoon peppermint extract
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper for easy removal.
  • In a mixing bowl, combine rolled oats, chocolate protein powder, cocoa powder, and salt. Stir well.
  • In another bowl, whisk together almond butter, honey (or maple syrup), brewed coffee, and peppermint extract until smooth.
  • Pour the wet mixture into the dry ingredients and mix thoroughly. Add dark chocolate chips for extra decadence if you wish.
  • Spread the mixture evenly in the prepared baking pan, pressing down firmly to avoid crumbly bars.
  • Bake for 25 minutes, or until the edges start to firm up and the center looks set.
  • Remove from the oven and let cool completely in the pan before slicing into bars.
