In another bowl, whisk together almond butter, honey (or maple syrup), brewed coffee, and peppermint extract until smooth.
Pour the wet mixture into the dry ingredients and mix thoroughly. Add dark chocolate chips for extra decadence if you wish.
Spread the mixture evenly in the prepared baking pan, pressing down firmly to avoid crumbly bars.
Bake for 25 minutes, or until the edges start to firm up and the center looks set.
Remove from the oven and let cool completely in the pan before slicing into bars.
