  • Almond butter or other nut butter: 1/4 cup
  • Peppermint extract: 1/2 tsp
  • Chia seeds: 1 tbsp
  • Sea salt: pinch

Instructions
 

  • Mix the dry ingredients: In a large bowl, combine oats, cocoa powder, coffee granules, and chia seeds.
  • Add the wet ingredients: Stir in almond butter, honey, and peppermint extract until the mixture sticks together.
  • Melt the chocolate: In a microwave or double boiler, melt the chocolate chips, then fold them into the mixture.
  • Form the bites: Roll the mixture into small balls, about 1 inch in diameter.
  • Chill: Place the bites on a tray and refrigerate for 10 minutes to set.
  • Store: Keep in an airtight container for up to a week
