Ingredients
  

  • 1 cup almond flour
  • 1/2 cup protein powder vanilla or chocolate flavor
  • 1/4 cup brewed espresso cooled
  • 1/2 cup chocolate chips
  • 1/4 cup coconut sugar or sweetener
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup almond butter
  • 1 large egg
  • 1 tsp vanilla extract

Instructions
 

  • Preheat Oven
  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Combine Dry Ingredients
  • In a bowl, mix almond flour, protein powder, coconut sugar, baking powder, and salt.
  • Add Wet Ingredients
  • Stir in almond butter, egg, vanilla extract, and espresso. Mix until a thick dough forms.
  • Fold in Chocolate Chips
  • Add chocolate chips and gently fold until evenly distributed.
  • Shape Cookies
  • Scoop dough onto baking sheet, forming 12 small balls. Flatten each slightly.
  • Bake and Cool
  • Bake for 10-12 minutes. Let cookies cool before removing from the tray.
