Ingredients

  • Ripe bananas mashed: 3 medium
  • All-purpose flour: 1 ¾ cups
  • Granulated sugar: ½ cup
  • Brown sugar: ¼ cup
  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Salt: ½ teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground cardamom: ½ teaspoon
  • Ground ginger: ½ teaspoon
  • Ground cloves: ¼ teaspoon
  • Eggs: 2 large
  • Butter melted: ½ cup

  • Brewed coffee: ½ cup
  • Powdered sugar: ¾ cup

Instructions
 

  • Step 1: Preheat and Prepare the Pan
  • Preheat your oven to 350°F (175°C). Grease a loaf pan and line it with parchment paper.
  • Step 2: Combine Dry Ingredients
  • In a large bowl, whisk flour, baking powder, baking soda, salt, cinnamon, cardamom, ginger, and cloves until blended.
  • Step 3: Mix Wet Ingredients
  • In another bowl, beat the sugars, eggs, melted butter, and vanilla until smooth. Add mashed bananas and Greek yogurt; mix until combined.
  • Step 4: Blend Wet and Dry Mixtures
  • Gradually fold the dry mixture into the wet ingredients. Mix until just combined—don't overdo it.
  • Step 5: Bake
  • Pour the batter into the prepared pan. Bake for 50 minutes or until a toothpick inserted in the center comes out clean.
  • Step 6: Make the Coffee Glaze
  • In a saucepan, combine brewed coffee, powdered sugar, and butter. Heat over medium, whisking until thickened. Add cinnamon if desired.
  • Step 7: Drizzle and Serve
  • Once the loaf cools, pour the warm coffee glaze over it. Let the glaze set before slicing. Enjoy!
