  • Ripe bananas: 3 medium sliced
  • Granulated sugar: 2 tablespoons for caramelizing

  • Baking powder: 1 teaspoon
  • Baking soda: ½ teaspoon
  • Salt: ½ teaspoon
  • Ground cinnamon: 1 teaspoon
  • Granulated sugar: ½ cup
  • Brown sugar: ½ cup
  • Eggs: 2 large
  • Sour cream: ½ cup
  • Butter melted: ½ cup
  • Vanilla extract: 1 teaspoon

For the Espresso Glaze:

  • Powdered sugar: 1 cup
  • Brewed espresso: 2 tablespoons
  • Butter: 1 tablespoon melted
  • Pinch of salt

Instructions
 

  • Step 1: Preheat and Prepare
  • Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan with parchment paper.
  • Step 2: Caramelize the Bananas
  • Heat a non-stick skillet over medium heat. Melt 2 tablespoons of butter and stir in 2 tablespoons of sugar.
  • Add banana slices and cook for 3-4 minutes per side until caramelized. Set aside to cool.
  • Step 3: Mix Dry Ingredients
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
  • Step 4: Combine Wet Ingredients
  • In another bowl, beat granulated sugar, brown sugar, eggs, sour cream, melted butter, and vanilla until smooth.
  • Step 5: Blend Wet and Dry Mixtures
  • Gradually add the dry mixture to the wet mixture. Stir until just combined.
  • Step 6: Fold in Caramelized Bananas
  • Gently fold the caramelized bananas into the batter without overmixing.
  • Step 7: Bake
  • Pour the batter into the prepared loaf pan. Bake for 55 minutes or until a toothpick comes out clean.
  • Step 8: Prepare Espresso Glaze
  • In a small saucepan, whisk together powdered sugar, brewed espresso, melted butter, and a pinch of salt until smooth.
  • Step 9: Drizzle and Serve
  • Once the bread has cooled, drizzle the espresso glaze over the top. Let it set before slicing.
