Ingredients
  

  • 3 ripe bananas mashed
  • 1 cup brewed coffee cooled
  • 1 cup flour whole wheat or all-purpose
  • ½ cup vanilla protein powder
  • 1 large egg
  • ¼ cup honey or maple syrup
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup coconut oil melted
  • 1 teaspoon vanilla extract

Instructions
 

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients

  • In a large mixing bowl, mash the ripe bananas, then add brewed coffee, egg, honey, melted coconut oil, and vanilla extract. Stir until well combined.

Combine Dry Ingredients

  • In another bowl, whisk together flour, protein powder, baking soda, and salt.

Combine Mixtures

  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!

Pour and Bake

  • Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.

Cool and Serve

  • Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack. Slice and enjoy!
