Ingredients
  

  • Rolled oats: 1 cup
  • Pitted dates: 1/2 cup
  • Almond butter: 1/4 cup
  • Instant coffee: 1 tbsp
  • Unsweetened cocoa powder: 2 tbsp
  • Almonds: 1/4 cup chopped
  • Honey or maple syrup: 1 tbsp
  • Vanilla extract: 1 tsp
  • Pinch of sea salt
  • Dark chocolate chips: 1/4 cup

Instructions
 

  • Blend dates: In a food processor, blend pitted dates until a paste forms.
  • Add dry ingredients: Add oats, cocoa powder, coffee, and a pinch of salt to the processor. Pulse until mixed.
  • Incorporate wet ingredients: Add almond butter, honey, and vanilla. Blend until the mixture sticks together.
  • Mix almonds and chocolate: Stir in chopped almonds and chocolate chips.
  • Shape bites: Roll the mixture into 1-inch balls.
  • Chill: Place on a tray and refrigerate for 10 minutes.
  • Serve or store: Enjoy immediately or store in an airtight container.
