Ingredients
  

For the Almond Cookies:

  • 1 ¾ cups all-purpose flour
  • 1 cup almond flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • ¼ tsp salt

For the Espresso Frosting:

  • ½ cup unsalted butter softened
  • 1 ½ cups powdered sugar
  • 2 tbsp brewed espresso or strong coffee
  • 1 tsp vanilla extract

Instructions
 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Make the Cookie Dough: In a bowl, mix flour, almond flour, sugar, baking soda, and salt. Add butter, egg, and vanilla, mixing until dough forms.
  • Shape the Cookies: Scoop out tablespoon-sized portions of dough. Roll them into balls and place them on the baking sheet.
  • Bake the Cookies: Bake for 12-15 minutes, or until edges are golden. Let them cool completely on a rack.
  • Prepare the Frosting: Beat butter, powdered sugar, espresso, and vanilla until smooth and creamy.
  • Frost the Cookies: Once cookies are cooled, spread the espresso frosting generously on top.
