Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a bowl, cream butter and sugars together until smooth.
Add the egg and vanilla, mixing until well combined.
In another bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
Scoop dough into 4 equal portions and shape into cookies.
Bake for 10-12 minutes, or until golden brown.
Let cookies cool on a rack.
Meanwhile, melt chocolate chips and heavy cream over a double boiler or in the microwave.
Stir in coffee granules until fully dissolved.
Dip cooled cookies into the coffee-infused chocolate.
Place cookies back on the cooling rack to set.
Let them cool (if you can resist) and serve.
