Ingredients
  

  • For the Cookies:
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • Pinch of salt
  • For the Coffee-Infused Chocolate:
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1 tbsp instant coffee granules

Instructions
 

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • In a bowl, cream butter and sugars together until smooth.
  • Add the egg and vanilla, mixing until well combined.
  • In another bowl, whisk flour, baking soda, and salt. Gradually add to the wet ingredients.
  • Scoop dough into 4 equal portions and shape into cookies.
  • Bake for 10-12 minutes, or until golden brown.
  • Let cookies cool on a rack.
  • Meanwhile, melt chocolate chips and heavy cream over a double boiler or in the microwave.
  • Stir in coffee granules until fully dissolved.
  • Dip cooled cookies into the coffee-infused chocolate.
  • Place cookies back on the cooling rack to set.
  • Let them cool (if you can resist) and serve.
