Ingredients
  

For the Salad:

  • 2 cucumbers thinly sliced
  • 1 tbsp olive oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1/2 tsp chili flakes
  • 1/4 tsp ground ginger
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

For the Coffee Macarons:

  • 1 cup powdered sugar
  • 1/2 cup almond flour
  • 1/4 cup egg whites
  • 1/4 cup granulated sugar
  • 1 tbsp coffee grounds
  • 1/4 tsp vanilla extract
  • 1/2 cup butter
  • 1/2 cup powdered sugar for filling

Instructions
 

  • Slice cucumbers and mix them in a bowl with olive oil, vinegar, honey, chili flakes, ginger, salt, and pepper.
  • For the macarons, whisk egg whites until frothy. Gradually add granulated sugar and beat until stiff peaks form.
  • Fold in almond flour, powdered sugar, and coffee grounds.
  • Pipe the batter onto a baking sheet and bake at 300°F for 15–20 minutes.
  • Let macarons cool. For the filling, beat butter and powdered sugar until smooth, then add vanilla extract.
  • Sandwich the filling between the macarons.
  • Serve the salad with a garnish of fresh mint and enjoy.
