Ingredients
For the Hazelnut Crust
- 1 cup hazelnuts toasted and finely ground
- 1 cup all-purpose flour
- ½ cup unsalted butter cold, cubed
- ¼ cup sugar
- ½ tsp salt
- 1 egg yolk
- 1 tbsp ice water
For the Mocha Coffee Mousse
- 1 cup heavy cream
- ½ cup dark chocolate melted
- ¼ cup powdered sugar
- 1 tbsp instant espresso dissolved in 1 tbsp hot water
- ½ tsp vanilla extract
- 1 tsp gelatin bloomed in 1 tbsp cold water
Instructions
Make the Hazelnut Crust
- Preheat oven to 350°F (175°C).
- Process hazelnuts, flour, sugar, and salt until finely ground.
- Add butter and pulse until the mixture resembles coarse crumbs.
- Mix in egg yolk and ice water until the dough holds together.
- Press into a tart pan and freeze for 15 minutes.
