Ingredients
Tart Shells
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter chilled and cubed

- 1 egg yolk
- 2 tbsp cold water

Espresso Mousse
- 1 cup heavy cream
- ¼ cup powdered sugar
- 2 tbsp cocoa powder
- 1 tbsp instant espresso powder
- 1 tsp vanilla extract
- ½ tsp gelatin powder
- 2 tbsp warm water
Chocolate Drizzle (Optional)
- ½ cup dark chocolate melted
Instructions
Prepare the Tart Shells
- Combine flour, sugar, and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add egg yolk and cold water, mixing until dough forms.
- Roll out dough and press into tart molds.
- Chill for 20 minutes, then bake at 350°F (175°C) for 12-15 minutes.
- Let cool completely before filling.
Make the Espresso Mousse
- Dissolve espresso powder in warm water. Sprinkle gelatin on top and let sit for 5 minutes.
