Ingredients
  

For the Salad:

  • 2 cucumbers sliced
  • 1 ripe avocado cubed
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

For the Mocha Pudding:

  • 1 cup milk
  • 1/4 cup sugar
  • 2 tbsp cocoa powder
  • 1 tbsp instant coffee
  • 2 tbsp cornstarch
  • 1/4 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • For the salad, toss cucumber and avocado with olive oil, lime juice, salt, pepper, and cilantro. Set aside.
  • In a small saucepan, whisk together milk, sugar, cocoa powder, instant coffee, and cornstarch.
  • Cook over medium heat until thickened, whisking constantly.
  • Once thickened, remove from heat and stir in vanilla extract and salt.
  • Let the pudding cool for a few minutes.
