Ingredients
  

  • 2 cups rolled oats
  • 1/4 cup brewed coffee cooled
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil melted
  • 1/2 tsp vanilla extract
  • 1/4 cup chopped nuts optional
  • 1/4 cup chocolate chips optional
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line your baking pan with parchment paper.
  • In a bowl, combine oats, cinnamon, and salt.
  • In another bowl, whisk together coffee, honey, coconut oil, and vanilla.
  • Pour wet ingredients into the dry ingredients, mixing well.
  • Stir in nuts and chocolate chips if using.
  • Spread mixture evenly in the pan and bake for 20 minutes, until firm.
  • Cool before slicing into bars.
