Ingredients
- 2 cups rolled oats
- 1/4 cup brewed coffee cooled
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil melted
- 1/2 tsp vanilla extract
- 1/4 cup chopped nuts optional
- 1/4 cup chocolate chips optional
- 1/2 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C) and line your baking pan with parchment paper.
- In a bowl, combine oats, cinnamon, and salt.
- In another bowl, whisk together coffee, honey, coconut oil, and vanilla.
- Pour wet ingredients into the dry ingredients, mixing well.
- Stir in nuts and chocolate chips if using.
- Spread mixture evenly in the pan and bake for 20 minutes, until firm.
- Cool before slicing into bars.
